Ingredients

  • 2 pounds Beef chuck roast, cut into 1-inch cubes
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 3 medium Carrots, peeled and sliced into 1-inch pieces
  • 2 medium Parsnips, peeled and sliced into 1-inch pieces
  • 3 medium Russet potatoes, peeled and cut into 1-inch chunks
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth
  • 1 bottle (11.2 ounces) Guinness beer
  • 2 Bay leaves
  • 4 Fresh thyme sprigs
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Water
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper evenly.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides, about 4-5 minutes per batch. Transfer the seared beef to the Crock Pot.

Step 3

In the same skillet, add the diced onion and cook until softened, about 2-3 minutes. Add the garlic and tomato paste, cooking for 1 minute while stirring constantly.

Step 4

Transfer the onion mixture to the Crock Pot, along with the carrots, parsnips, and potatoes.

Step 5

Pour the beef broth and Guinness beer over the ingredients in the Crock Pot. Add the bay leaves and thyme sprigs, tucking them into the liquid.

Step 6

Cover the Crock Pot with its lid and cook on LOW for 8-10 hours, or on HIGH for 4-6 hours, until the beef is tender and the vegetables are fully cooked.

Step 7

In a small bowl, whisk together the flour and water to create a slurry. Stir the slurry into the stew 30 minutes before serving to thicken the sauce.

Step 8

Discard the bay leaves and thyme sprigs before serving.

Step 9

Ladle the stew into bowls, garnish with chopped parsley if desired, and serve with crusty bread or a side of your choice.
