Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter (cold, cubed)
  • 50 grams Powdered sugar
  • 1 pinch Salt
  • 2 tablespoons Cold water
  • 250 grams Cream cheese (softened)
  • 50 grams Granulated sugar
  • 150 grams Guava paste
  • 50 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 large Egg

Directions

Step 1

Preheat your oven to 175°C (350°F).

Step 2

In a large bowl, mix the flour, powdered sugar, and a pinch of salt.

Step 3

Add the cold, cubed butter and rub it into the flour with your fingertips until the mixture resembles coarse sand.

Step 4

Add cold water, one tablespoon at a time, and mix until the dough just comes together. Form into a disk, wrap in plastic wrap, and chill for 20 minutes.

Step 5

Roll out the chilled dough on a lightly floured surface to fit a tart pan (9-inch). Gently press the dough into the pan and trim off any excess from the edges.

Step 6

Prick the bottom of the crust with a fork, line with parchment paper, and fill with pie weights or dried beans. Bake for 10 minutes, remove the weights, and bake for another 5 minutes until lightly golden. Allow to cool.

Step 7

In a medium bowl, beat the cream cheese and granulated sugar until smooth.

Step 8

Add the egg, heavy cream, and vanilla extract to the cream cheese mixture, beating until fully incorporated.

Step 9

Spread the guava paste over the cooled tart shell in an even layer.

Step 10

Pour the cream cheese mixture over the guava layer, spreading evenly.

Step 11

Bake the tart in the preheated oven for 15-20 minutes, or until the filling is set and slightly puffed.

Step 12

Allow to cool to room temperature, then refrigerate for at least 2 hours before serving to allow the layers to set.

Step 13

Slice and enjoy your creamy, fruity Guava Cheese Tart!
