Ingredients

  • 6 pieces Dried guajillo chiles
  • 4 pieces Garlic cloves
  • 0.5 pieces White onion
  • 2 tablespoons Apple cider vinegar
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Dried oregano
  • 1.5 teaspoons Salt
  • 1 teaspoon Freshly ground black pepper
  • 1 cup Water
  • 2 tablespoons Fresh lime juice

Directions

Step 1

Remove the stems and seeds from the dried guajillo chiles. Rinse them under cold water to remove any dust or debris.

Step 2

In a medium saucepan, bring 1 cup of water to a boil. Add the cleaned guajillo chiles and simmer for 5 minutes until softened. Remove from heat and let them steep for another 5 minutes.

While the chiles are softening, peel the garlic cloves and roughly chop the onion half.
