  • 2 tbsp Olive oil
  • 1 tsp Salt

  • 2 medium Ripe avocados
  • 1 medium Lime
  • 1 small Tomato
  • 0.25 cup Red onion
  • 2 tbsp Cilantro
  • 1 small Jalapeño (optional)
  • 0.5 tsp Salt (for guacamole)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Wash the baby potatoes thoroughly and slice them in half.

Step 3

In a large mixing bowl, toss the potatoes with olive oil, 1 tsp salt, black pepper, garlic powder, and cumin powder until evenly coated.

Spread the seasoned potatoes on a baking sheet in a single layer, cut side down.

Roast the potatoes in the oven for 20-25 minutes, or until they are golden brown and crispy. Flip them halfway through cooking for even browning.
