Ingredients

  • 12 oz spaghetti
  • 2 large ripe avocados
  • 2 garlic cloves
  • 2 tbsp lime juice
  • 1 cup cherry tomatoes
  • 0.25 cup red onion
  • 0.25 cup cilantro
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 5 basil leaves (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8–10 minutes. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, prepare the guacamole sauce. Scoop out the flesh of the avocados and place it in a large mixing bowl.

Step 3

Mince the garlic cloves finely and add them to the avocado. Add the lime juice, salt, and black pepper. Mash everything together using a fork or potato masher until smooth and creamy.

Step 4

Dice the cherry tomatoes and finely chop the red onion and cilantro. Fold them into the mashed avocado mixture. Drizzle in the olive oil and a pinch of red pepper flakes for a subtle heat kick.

Step 5

Toss the cooked spaghetti with the guacamole sauce until the pasta is well-coated. If the sauce is too thick, add a little of the reserved pasta water, 1 tablespoon at a time, until the desired consistency is reached.

Step 6

Taste and adjust seasoning as needed, adding more lime juice or salt for flavor balance.

Step 7

Transfer the guacamole pasta to a serving dish and garnish with fresh basil leaves, if desired. Serve immediately and enjoy!
