Ingredients

  • 1 cup All-purpose flour
  • 1 cup Whole milk
  • 3 pieces Large eggs
  • 2 tablespoons Unsalted butter
  • 1 cup Gruyere cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 0 Nonstick cooking spray or butter for greasing

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a popover pan or a standard muffin tin in the oven to warm while you prepare the batter.

Step 2

In a medium saucepan, warm the whole milk over low heat until it is lukewarm. Do not let it boil.

Step 3

In a large mixing bowl, whisk the eggs until they are pale and frothy.

Step 4

Slowly whisk in the warm milk, melted unsalted butter, salt, and black pepper to the eggs until fully combined.

Step 5

Gradually sift in the flour, whisking constantly to ensure the batter stays smooth and lump-free.

Step 6

Fold in the grated Gruyere cheese, reserving about 2 tablespoons to sprinkle on top of the popovers.

Step 7

Carefully remove the pre-heated pan from the oven and generously grease each cup with nonstick cooking spray or butter.

Step 8

Fill each cup of the popover pan or muffin tin about two-thirds full with the batter.

Step 9

Sprinkle the reserved Gruyere cheese on top of each filled cup.

Step 10

Bake in the oven at 425°F (220°C) for 15 minutes without opening the oven door.

Step 11

After 15 minutes, lower the oven temperature to 375°F (190°C) and continue to bake for an additional 20-25 minutes, or until the popovers are golden brown and puffy.

Step 12

Once baked, remove the popovers from the oven and transfer them to a wire rack to cool slightly for 5 minutes.

Step 13

Serve warm and enjoy!
