Ingredients

  • 400 g Spaghetti
  • 2 Grouse breast fillets
  • 2 tbsp Olive oil
  • 4 Egg yolks
  • 80 g Grated Parmesan cheese
  • 2 Garlic cloves
  • 100 g Pancetta
  • 0 to taste Salt
  • 0 to taste Black pepper, freshly ground
  • 0 to garnish Fresh parsley, finely chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

While the pasta cooks, prepare the grouse. Pat the grouse fillets dry with paper towels and season lightly with salt and pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the grouse fillets and cook for about 3-4 minutes on each side, or until golden brown and just cooked through. Remove the grouse from the skillet and let rest on a cutting board. Once cool, slice into thin strips.
