Ingredients

  • 4 pieces grouper fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 1 small, finely minced shallot
  • 2 cloves, finely minced garlic
  • 0.25 cup whiskey (preferably a smooth type)
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the grouper fillets dry with a paper towel, then season both sides generously with salt and black pepper.

Step 3

Heat a large, oven-safe skillet over medium-high heat and add the olive oil. Once hot, place the grouper fillets in the skillet, skin-side down if applicable. Sear for 2-3 minutes, or until the bottom is golden brown. Flip the fillets carefully and allow them to cook for another 2 minutes.

Step 4

Transfer the skillet to the preheated oven and cook for 6-8 minutes, or until the fillets are cooked through and flake easily with a fork. Remove from oven and set aside to rest.
