Ingredients

  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 15 ounces ricotta cheese
  • 1 large egg
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 12 lasagna noodles, uncooked
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute, stirring constantly.

Step 4

Add the ground turkey to the skillet and cook until browned, breaking it apart with a spatula, about 5-6 minutes.

Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and black pepper. Simmer the sauce over low heat for 15 minutes.

While the sauce is simmering, prepare the ricotta mixture in a medium bowl. Combine ricotta cheese, the egg, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, and fresh parsley. Mix until well combined.

Spread about 1/2 cup of the meat sauce on the bottom of a 9x13-inch baking dish.

Place 3 lasagna noodles over the sauce, then spread 1/3 of the ricotta mixture over the noodles.

Add 1/3 of the meat sauce over the ricotta layer, then sprinkle with 1/3 of the remaining mozzarella cheese.

Repeat the layering process (noodles, ricotta, meat sauce, mozzarella) two more times.

Sprinkle the remaining Parmesan cheese on top of the final layer of mozzarella.

Cover the baking dish with aluminum foil, making sure it does not touch the cheese. Bake for 40 minutes.

Remove the foil and bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
