Ingredients

  • 1 lb Ground beef (80% lean, 20% fat)
  • 2 tsp Black peppercorns
  • 1 tsp Kosher salt
  • 1 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 1 tbsp Vegetable oil
  • 4 Burger buns
  • 4 Cheddar cheese slices
  • 4 Lettuce leaves
  • 4 Tomato slices
  • 8 Pickle slices
  • 4 tbsp Mayonnaise
  • 2 tbsp Mustard

Directions

Step 1

In a small bowl, coarsely grind the black peppercorns using a mortar and pestle or a spice grinder. Set aside.

Step 2

In a large mixing bowl, combine the ground beef with kosher salt, garlic powder, onion powder, and half of the ground black peppercorns. Mix gently with your hands until evenly combined, being careful not to overwork the meat.

Step 3

Divide the beef mixture into 4 equal portions and shape them into burger patties that are about 3/4 inch thick. Using your thumb, make a slight indent in the center of each patty to ensure even cooking.

Step 4

Heat a cast-iron skillet or grill pan over medium-high heat. Add the vegetable oil and swirl to coat the surface.

Step 5

Place the burger patties in the skillet. Cook for 3-4 minutes on the first side, until a crust forms, then flip the patties.

Step 6

Sprinkle the remaining ground black pepper evenly over the cooked side of the burgers. Place a slice of cheddar cheese on top of each patty and cook for another 3-4 minutes, until the cheese melts and the burgers reach your desired level of doneness (160°F for medium).

Step 7

While the burgers are cooking, toast the burger buns cut side down on a separate skillet or grill until golden brown.

Step 8

Assemble the burgers: spread 1 tablespoon of mayonnaise on the bottom half of each toasted bun. Add lettuce, a cooked beef patty with melted cheese, a slice of tomato, and 2 pickle slices. Spread 1/2 tablespoon of mustard on the top half of the bun, then place it on top to complete the burger.

Step 9

Serve immediately with your favorite side dishes, such as fries or a fresh salad.
