Ingredients

  • 1 pound Ground beef
  • 1 pound Ground venison
  • 1 large Yellow onion, diced
  • 1 large Bell pepper, diced
  • 3 cloves Garlic, minced
  • 15 ounces Tomato sauce
  • 14.5 ounces Diced tomatoes
  • 2 cups Beef broth
  • 2 cups Elbow macaroni
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and bell pepper to the pot and sauté for 4-5 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the ground beef and venison to the pot. Cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 7-8 minutes. Drain excess grease if necessary.

Step 5

Stir in the paprika, ground cumin, chili powder, dried oregano, salt, and black pepper. Cook for 1 minute to toast the spices.

Step 6

Add the tomato sauce, diced tomatoes (with their juices), and beef broth. Stir well to combine, then bring to a gentle simmer.

Step 7

Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld.

Step 8

Gradually add the elbow macaroni to the pot. Stir well and cook for an additional 8-10 minutes, stirring occasionally, until the pasta is tender and cooked through.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Remove from heat and let rest for 5 minutes before serving.

Step 11

Garnish with chopped parsley if desired and serve warm.
