Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon as it cooks. Once browned, transfer the beef to a bowl using a slotted spoon and set aside.

Step 2

In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.

Step 3

Stir in the sliced carrots and celery, cooking for another 5 minutes until they start to soften.

Step 4

Return the browned ground beef to the pot. Add the diced potatoes, beef broth, tomato paste, and Worcestershire sauce.

Step 5

Stir in the dried thyme, dried rosemary, and bay leaves. Season with salt and black pepper.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 45 minutes, stirring occasionally, until the vegetables are tender.

Step 7

Add the frozen peas and continue to cook for an additional 5 minutes.

Step 8

Remove the bay leaves before serving. Taste and adjust seasoning if necessary.
