Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced

  • 2 cups red enchilada sauce
  • 8 pieces flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 0.25 cup fresh cilantro, chopped (optional garnish)
  • 0.5 cup sour cream (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
