Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes (14 oz can)
  • 2 tbsp tomato paste
  • 1 can kidney beans, drained and rinsed (15 oz can)
  • 1 can black beans, drained and rinsed (15 oz can)
  • 1 cup beef or chicken broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 0.25 cup sour cream (optional, for topping)
  • 0.5 cup shredded cheddar cheese (optional, for topping)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef to the pot and cook, breaking it apart with a wooden spoon, until browned and fully cooked through, about 5-6 minutes. Drain excess fat, if necessary.

Step 3

Add the diced onion, minced garlic, and diced green bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.

Step 4

Stir in the tomato paste and cook for 1-2 minutes to enhance its flavor.

Step 5

Add the diced tomatoes, kidney beans, black beans, beef or chicken broth, chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Stir to combine all ingredients thoroughly.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 30 minutes, stirring occasionally to prevent sticking.

Step 7

Remove the lid and simmer for an additional 10-15 minutes to let the chili thicken to your desired consistency.

Step 8

Taste and adjust seasoning with additional salt or spices, if needed.

Step 9

Serve the chili hot in bowls. Optionally, garnish with chopped fresh cilantro, sour cream, and shredded cheddar cheese.
