Ingredients

  • 2.5 cups all-purpose flour
  • 0.75 cup unsalted butter
  • 8 tablespoons ice water
  • 8 ounces cream cheese
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons chives, finely chopped
  • 0.5 teaspoons garlic powder
  • 0.25 teaspoons paprika
  • 1 large egg
  • 1 tablespoon milk

Directions

Step 1

In a large bowl, whisk together the flour and a pinch of salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 2

Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Step 3

In a medium bowl, mix together the cream cheese, shredded cheddar, parsley, chives, garlic powder, and paprika until smooth and well combined.

Step 4

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 5

On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter (about 4 inches in diameter) to cut out circles of dough.

Step 6

Place a generous tablespoon of the cheese mixture in the center of each dough circle. Fold the dough over the filling to form a half-moon shape and press the edges to seal. Crimp the edges with a fork for a decorative touch.

Step 7

In a small bowl, whisk together the egg and milk to make an egg wash. Brush the egg wash over the tops of the pastries.

Step 8

Place the Grizzlenuckles on the prepared baking sheet and bake for 18-20 minutes, or until golden brown and flaky.

Step 9

Allow to cool slightly before serving. Enjoy warm or at room temperature!
