Ingredients

  • 2 large zucchini
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 4 ounces cream cheese, softened
  • 0.25 cup parmesan cheese, grated
  • 1 clove garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 toothpicks

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Trim the ends of the zucchini and slice them lengthwise into thin strips, about 1/8-inch thick. You should get about 12 strips.

Brush both sides of the zucchini slices with olive oil, then lightly season with a pinch of salt and black pepper.
