Ingredients

  • 2 pounds Yellow tomatoes
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 3 Garlic cloves
  • 3 cups Vegetable broth
  • 1 cup Heavy cream
  • 0.25 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 slices Crusty bread (optional, for serving)

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

Slice the yellow tomatoes in half and drizzle them with 1 tablespoon of olive oil.

Step 3

Grill the tomatoes, cut side down, for 5-7 minutes, or until charred and softened. Remove from the grill and set aside.

Step 4

In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat.

Step 5

Dice the yellow onion and add it to the pot. Sauté for 5 minutes or until it becomes translucent.

Step 6

Mince the garlic cloves and add them to the pot, cooking for an additional 1-2 minutes until fragrant.

Step 7

Chop the grilled tomatoes and add them to the pot, along with the vegetable broth. Stir to combine.

Step 8

Bring the mixture to a simmer and let it cook for 20 minutes, stirring occasionally.

Step 9

Remove the pot from the heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the mixture to a blender and blend in batches.

Step 10

Return the soup to low heat and stir in the heavy cream, fresh basil, salt, and black pepper.

Step 11

Taste and adjust seasoning as needed.

Step 12

Ladle the soup into bowls and garnish with additional basil leaves if desired. Serve with crusty bread on the side for dipping.
