Ingredients

  • 1 large Zucchini
  • 1 large Red bell pepper
  • 2 large Portobello mushrooms
  • 1 medium Red onion
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 Whole wheat tortillas
  • 2 cups Baby spinach
  • 0.5 cup Feta cheese
  • 0.5 cup Plain Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh dill

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Slice the zucchini lengthwise into 1/4-inch thick planks. Core and slice the red bell pepper into quarters. Slice the red onion into 1/2-inch thick rounds. Remove the stems from the portobello mushrooms.

Step 3

In a large bowl, toss the zucchini, red bell pepper, portobello mushrooms, and red onion with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.

Place the vegetables on the preheated grill. Cook for 3-4 minutes on each side or until tender and slightly charred. Remove from the grill and let cool slightly.
