Ingredients

  • 2 medium Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Red onion
  • 8 medium Mushrooms
  • 12 pieces Cherry tomatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 pieces Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning while grilling.

Wash all vegetables thoroughly and pat them dry with a kitchen towel.

Step 3

Cut the zucchini into thick half-moon slices, the bell peppers into 1-inch squares, and the red onion into chunks similar in size to the bell peppers.

Leave the mushrooms whole or halve them if they are large. Keep the cherry tomatoes whole.

In a small bowl, mix the olive oil, garlic powder, dried oregano, dried basil, salt, and black pepper to make the marinade.
