Ingredients

  • 2 medium Zucchini
  • 2 medium Yellow squash
  • 2 large Bell peppers (red, yellow, or orange)
  • 1 large Red onion
  • 1 bunch Asparagus
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Lemon
  • 1 can (for greasing foil) Cooking spray
  • 4 sheets (approximately 12x12 inches each) Aluminum foil

Directions

Step 1

Preheat your grill to medium-high heat (around 375–400°F).

Step 2

Wash and dry all vegetables thoroughly.

Step 3

Slice the zucchini and yellow squash into thin rounds.

Step 4

Core and seed the bell peppers, then cut them into thin strips.

Step 5

Peel the red onion and cut it into wedges.

Step 6

Trim the woody ends off the asparagus spears.

Step 7

In a large mixing bowl, combine the zucchini, squash, bell peppers, onion wedges, and asparagus. Toss the vegetables with olive oil, garlic powder, Italian seasoning, salt, and black pepper until evenly coated.

Cut four sheets of aluminum foil, each approximately 12x12 inches. Spray one side of each sheet lightly with cooking spray to prevent sticking.

Divide the seasoned vegetables evenly among the four foil sheets, placing them in the center of each sheet.
