Ingredients

  • 2 large bell peppers (red, yellow, and green)
  • 2 medium zucchini
  • 1 large red onion
  • 20 pieces cherry tomatoes
  • 12 pieces baby bella mushrooms
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 10 pieces wooden skewers

Directions

Step 1

Soak the wooden skewers in water for about 30 minutes to prevent them from burning while grilling.

Step 2

Wash and cut the bell peppers into 1-inch squares, slice the zucchini into 1/2-inch thick rounds, peel and cut the red onion into wedges, and clean the mushrooms if necessary.

Step 3

In a large bowl, prepare the marinade by mixing together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper.

Step 4

Add the cut vegetables and cherry tomatoes into the bowl with the marinade. Toss well to coat all the pieces evenly. Let the vegetables marinate for at least 15 minutes to absorb the flavors.

Step 5

Preheat the grill to medium-high heat. If using a stovetop grill pan, preheat it over medium-high heat.

Step 6

Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation.

Step 7

Place the kebabs on the grill or grill pan. Cook for about 12-15 minutes, turning occasionally, until the vegetables are tender and lightly charred on all sides.

Step 8

Remove the kebabs from the grill and allow them to cool slightly before serving.

Step 9

Serve the vegetable kebabs hot as a side dish or as a main course with a side of your favorite sauce or dipping.
