Ingredients

  • 4 pieces ripe tomatoes (medium-sized, such as Roma or vine-ripened)
  • 2 tablespoons olive oil
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons dried oregano
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper (freshly ground)
  • 1 tablespoons balsamic vinegar (optional for garnish)
  • 5 pieces fresh basil leaves (optional for garnish)

Directions

Step 1

Preheat the grill to medium-high heat (about 375-400°F). If using a grill pan, heat it on the stovetop over medium-high heat.

Step 2

Wash the tomatoes and slice them in half lengthwise. Pat them dry with a paper towel to ensure the oil and seasoning adhere well.

Step 3

In a small bowl, mix the olive oil, garlic powder, dried oregano, sea salt, and black pepper.

Step 4

Brush the cut sides of the tomatoes generously with the olive oil mixture. Make sure they are evenly coated for optimal flavor.

Step 5

Place the tomatoes cut-side down on the preheated grill or grill pan. Close the lid if using an outdoor grill.

Step 6

Grill the tomatoes for about 4 minutes, or until you see char marks and the tomatoes begin to soften slightly.

Step 7

Carefully flip the tomatoes using tongs and grill for an additional 3-4 minutes on the skin side. They should be tender but still hold their shape.

Step 8

Remove the tomatoes from the grill and transfer them to a serving platter.

Step 9

Optionally, drizzle the grilled tomatoes with balsamic vinegar and garnish with fresh basil leaves before serving.

Step 10

Serve warm as a side dish, appetizer, or topping for salads, pasta, or crusty bread.
