Ingredients

  • 2 pieces (8-10 oz each) sirloin steak
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 medium (minced) shallot
  • 2 cloves (minced) garlic
  • 8 ounces (sliced) cremini mushrooms
  • 1 cup Marsala wine
  • 0.5 cup beef stock
  • 0.25 cup heavy cream
  • 2 tablespoons (chopped, for garnish) fresh parsley

Directions

Step 1

Pat the sirloin steaks dry with paper towels. Rub the steaks on both sides with 1 tablespoon of olive oil, then season evenly with salt and black pepper.

Step 2

Preheat your grill to medium-high heat or heat a grill pan over medium-high heat. Grill the steaks for 4-5 minutes per side for medium-rare, or to your preferred level of doneness. Use an instant-read thermometer to check the internal temperature (130°F for medium-rare, 140°F for medium). Remove the steaks from the grill, tent with foil, and let rest for 5-7 minutes.

Step 3

While the steaks are resting, heat a large skillet over medium heat and melt the unsalted butter with the remaining 1 tablespoon of olive oil.

Step 4

Add the minced shallot and garlic to the skillet. Cook for 2-3 minutes until fragrant and softened.

Step 5

Stir in the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and browned.

Step 6

Pour the Marsala wine into the skillet and bring to a simmer, scraping the bottom of the pan to deglaze and incorporate the browned bits. Cook for 3-4 minutes to reduce slightly.

Step 7

Stir in the beef stock and heavy cream, and simmer for an additional 3-4 minutes, allowing the sauce to thicken. Season the sauce with salt and pepper to taste.

Step 8

To serve, plate the grilled sirloin steaks and spoon the Marsala mushroom sauce generously over the top. Garnish with chopped fresh parsley and serve immediately.
