Ingredients

  • 16 pieces Large shrimp (peeled and deveined)
  • 3 tablespoons Olive oil
  • 2 cloves Garlic (minced)
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 loaf French baguette
  • 2 cups Fresh tomatoes (diced)
  • 0.25 cup Fresh basil leaves (chopped)
  • 1 tablespoon Balsamic vinegar
  • 0.25 cup Parmesan cheese (grated)

Directions

Step 1

1. In a small bowl, combine 2 tablespoons of olive oil, minced garlic, lemon juice, salt, and black pepper. Add the shrimp and toss to coat evenly. Cover and let the shrimp marinate in the refrigerator for 15 minutes.

Step 2

2. Preheat a grill or grill pan over medium heat. Thread the shrimp onto skewers for easy grilling, if desired.

Step 3

3. While the shrimp marinates, prepare the bruschetta topping by combining diced tomatoes, chopped basil, 1 tablespoon of olive oil, and balsamic vinegar in a bowl. Mix well and set aside.

Step 4

4. Slice the baguette diagonally into 12 slices, each about 1/2-inch thick. Brush each slice lightly with the remaining 1 tablespoon of olive oil.

Step 5

5. Grill the baguette slices for 1-2 minutes on each side, or until they are golden and have char marks. Remove from the grill and set aside.

Step 6

6. Grill the shrimp for 2-3 minutes per side until they turn pink and are fully cooked through. Remove from the grill and set aside.

Step 7

7. To assemble, top each grilled baguette slice with a spoonful of the tomato-basil mixture, a grilled shrimp, and a sprinkle of grated Parmesan cheese.

Step 8

8. Serve immediately and enjoy your Grilled Shrimp Bruschetta!
