Ingredients

  • 4 pieces rock lobster tails
  • 4 tablespoons unsalted butter
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley
  • 4 pieces lemon wedges

Directions

Step 1

Preheat your grill to medium-high heat (about 400°F/200°C) and lightly oil the grates to prevent sticking.

Step 2

Using kitchen shears, carefully cut down the top of each lobster tail shell lengthwise, avoiding the meat beneath. Gently pull apart the shell to expose the meat. Use a small knife to score the top of the meat for even cooking.

Step 3

In a small saucepan over low heat, melt the butter and add minced garlic, lemon juice, paprika, salt, and black pepper. Stir well and let the mixture infuse for 2-3 minutes. Remove from heat.

Step 4

Brush the prepared lobster tails with olive oil to keep them moist on the grill, then brush generously with the garlic butter mixture, reserving some for later.

Step 5

Place the lobster tails on the grill meat-side down. Cook for about 4-5 minutes, then flip them over so the shells rest on the grates.

Step 6

Brush the tails again with the remaining garlic butter and continue grilling for another 3-5 minutes, or until the meat is opaque and slightly firm to the touch. Cooking times may vary depending on the size of the tails.

Step 7

Remove the lobster tails from the grill and sprinkle chopped fresh parsley over the top for garnish.

Step 8

Serve immediately with lemon wedges on the side for squeezing over the meat.
