Ingredients

  • 4 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 8 slices Sandwich bread
  • 4 tablespoons Mayonnaise
  • 8 ounces Roast beef
  • 4 slices Provolone cheese
  • 2 tablespoons Dijon mustard
  • 1 cup Arugula

Directions

Step 1

1. Heat 1 tablespoon of butter in a skillet over medium heat. Thinly slice the onion and add it to the skillet. Sprinkle with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until the onions are caramelized. Remove from heat and set aside.

Step 2

2. Spread a thin layer of mayonnaise on one side of each slice of bread. This will be the side that gets grilled.

Step 3

3. Lay 4 slices of bread, mayonnaise-side down, on a clean work surface. Spread about 1/2 tablespoon of Dijon mustard on the upward-facing side of each slice.

Step 4

4. Layer each bread slice with 2 ounces of roast beef, 1 slice of Provolone cheese, and a small handful of arugula. Spoon a portion of the caramelized onions on top of the arugula.

Step 5

5. Top each sandwich with another slice of bread, mayonnaise-side up.

Step 6

6. Heat a large skillet or griddle over medium heat. Melt 1 tablespoon of butter in the skillet.

Step 7

7. Place the assembled sandwiches in the skillet (you may need to do this in batches depending on the size of your skillet). Cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Step 8

8. Remove the sandwiches from the skillet and let them rest for 1-2 minutes. Cut each sandwich in half and serve warm.
