Ingredients

  • 500 grams Baby potatoes
  • 1 medium-sized Yellow onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Fresh rosemary
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 sheets (approximately 12x12 inches) Aluminum foil

Directions

Step 1

Wash the baby potatoes thoroughly and pat them dry. Cut any larger potatoes into halves so all pieces are roughly the same size.

Step 2

Peel the yellow onion and slice it into thin rings.

Step 3

In a large mixing bowl, combine the olive oil, fresh rosemary, garlic powder, paprika, salt, and black pepper.

Step 4

Add the potatoes and onion slices to the bowl. Toss everything together until the potatoes and onions are evenly coated with the seasoning.

Step 5

Lay a sheet of aluminum foil flat on your work surface. Place half of the potato and onion mixture in the center of the foil. Fold the sides of the foil inward and crimp the edges to seal, creating a packet. Repeat with the second sheet of foil and the remaining mixture.

Step 6

Preheat your grill to medium heat (around 375°F or 190°C).

Step 7

Place the foil packets on the grill and close the lid. Cook for 20–25 minutes, turning the packets halfway through, until the potatoes are fork-tender and the onions are caramelized.

Step 8

Carefully remove the packets from the grill and let them rest for 5 minutes before opening them. Be cautious of hot steam when unwrapping.

Step 9

Serve the grilled potato and onion packets directly from the foil or transfer them to a serving dish. Enjoy as a flavorful side dish to accompany your favorite grilled entree.
