Ingredients

  • 2 racks Pork baby back ribs
  • 2 tablespoons Brown sugar
  • 1 tablespoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Barbecue sauce

Directions

Step 1

Remove the membrane from the bone side of the pork baby back ribs by slipping a knife under the membrane and gently pulling it off. You can use a paper towel to grip the membrane for better leverage.

Step 2

In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, ground cumin, chili powder, salt, and black pepper to create the dry rub.

Step 3

Pat the ribs dry with paper towels and drizzle olive oil over both sides. Massage the dry rub evenly over both sides of the ribs, ensuring they are generously coated.

Step 4

Preheat a grill to medium-low heat (about 250°F to 275°F). If you’re using a charcoal grill, arrange the coals on one side to create a two-zone heating area for indirect cooking.

Step 5

Wrap the ribs tightly in aluminum foil to retain moisture, and place them on the grill away from direct heat. Close the lid and let them cook for 2 to 2.5 hours, checking occasionally to ensure the grill maintains a consistent temperature.

Step 6

Carefully remove the ribs from the foil and place them directly on the grill grates over indirect heat. Baste the ribs with barbecue sauce using a brush, turning and basting frequently to develop a caramelized glaze. Let them cook for an additional 30 minutes.

Step 7

After grilling, remove the ribs from the grill and let them rest for 10 minutes. Slice into individual ribs and serve with extra barbecue sauce on the side, if desired.
