Ingredients

  • 1.5 lbs Baby potatoes
  • 2 tbsp Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 tbsp Fresh rosemary, finely chopped
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Unsalted butter, cubed
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your grill to medium-high heat (375°F to 400°F).

Step 2

Thoroughly wash and dry the baby potatoes. If the potatoes are larger, cut them into bite-sized pieces to ensure even cooking.

Step 3

In a large bowl, combine the potatoes, olive oil, minced garlic, chopped rosemary, paprika, salt, and black pepper. Toss until the potatoes are evenly coated.

Step 4

Tear off a large piece of heavy-duty aluminum foil (about 18 inches long) and place the seasoned potatoes in the center. Add the cubed butter evenly on top of the potatoes.

Step 5

Bring the long sides of the foil together and fold them over to seal tightly. Then fold the shorter sides inward to create a secure packet. Make sure the packet is well-sealed to prevent any juices from leaking.

Step 6

Place the foil packet on the preheated grill. Close the lid and cook for 25-30 minutes, flipping the packet halfway through. The potatoes are done when they are fork-tender.

Step 7

Carefully remove the foil packet from the grill using tongs, as it will be very hot. Allow it to rest for a minute before carefully opening the foil to release the steam.

Step 8

Transfer the potatoes to a serving dish and sprinkle with fresh parsley, if desired. Serve immediately and enjoy!
