Ingredients

  • 12 pieces Fresh oysters
  • 4 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice
  • 3 tablespoons Parmesan cheese, grated
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Baking soda
  • 6 tablespoons Cold unsalted butter, cubed
  • 0.75 cups Buttermilk
  • 1 tablespoon Honey
  • 2 tablespoons Melted butter (for brushing biscuits)

Directions

Step 1

Preheat your grill to high heat (about 450°F) or set your oven to the broil setting.

Step 2

Scrub and rinse the oysters under cold water to clean them. Place them on a tray with the curved side facing downward.

Step 3

In a small saucepan, melt 4 tablespoons of butter over medium heat. Add the minced garlic and sautée for 1-2 minutes until fragrant.

Step 4

Stir in chopped parsley, lemon juice, salt, and pepper. Remove from heat and set aside.

Step 5

Carefully shuck the oysters using an oyster knife. Discard the top shell and loosen the oyster from the bottom shell, leaving it in the shell.

Step 6

Place the oysters on a grill-safe tray or directly on the grill grates. Spoon a little of the garlic butter onto each oyster, then sprinkle with parmesan cheese.

Step 7

Grill the oysters for 5-7 minutes, or until the edges curl and the cheese is melted and bubbly. Remove from heat and set aside.

Step 8

To make the biscuits, preheat your oven to 425°F and line a baking sheet with parchment paper.

Step 9

In a large mixing bowl, whisk together flour, baking powder, baking soda, and 1/2 teaspoon of salt.

Step 10

Add the cold cubed butter to the dry ingredients. Using your fingers or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.

Step 11

Add the buttermilk and honey to the mixture. Stir gently just until combined, being careful not to overmix.

Step 12

Turn the dough out onto a floured surface. Gently pat or roll the dough to about 1-inch thickness.

Step 13

Use a round biscuit cutter to cut out biscuits and place them on the prepared baking sheet. Re-roll the scraps as necessary to cut more biscuits.

Step 14

Brush the tops of the biscuits with melted butter and bake for 12-15 minutes, or until golden brown.

Step 15

Serve the grilled oysters alongside the warm biscuits. Optionally, provide lemon wedges and hot sauce for extra flavor.
