  • 2 whole lobsters (1 to 1.5 pounds each)
  • 4 tablespoons unsalted butter
  • 2 large garlic cloves, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 pieces lemon wedges (for serving)

Directions

Step 1

Prepare the lobsters by placing them on their backs and using a sharp knife to carefully split them in half lengthwise through the head and tail. Remove the stomach sac and intestines, but leave the meat in place.

Step 2

In a small saucepan, melt the butter over medium heat. Add the minced garlic, lemon juice, parsley, paprika, salt, and pepper. Stir well and remove from heat.

Step 3

Preheat your grill to medium-high heat (about 375°F/190°C). Brush the grill grates lightly with olive oil to prevent sticking.

Step 4

Brush the lobster flesh generously with the garlic butter mixture, reserving some for later basting.

Step 5

Place the lobster halves, flesh side down, on the preheated grill. Cook for 4-5 minutes until slightly charred.

Step 6

Flip the lobsters shell side down and baste the flesh with more garlic butter. Continue cooking for another 6-8 minutes, or until the lobster meat is opaque and reaches an internal temperature of 135–140°F (57–60°C).

Step 7

Remove the lobsters from the grill and brush with any remaining garlic butter.
