Ingredients

  • 6 pieces Roma tomatoes
  • 3 tablespoons Extra virgin olive oil
  • 3 pieces Garlic cloves, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your grill (or grill pan) to medium-high heat.

Step 2

Wash and dry the Roma tomatoes. Slice them in half lengthwise.

Step 3

In a small bowl, combine the olive oil, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well to create a marinade.

Step 4

Brush the cut sides of the tomatoes generously with the marinade, ensuring the surface is evenly coated.

Step 5

Place the tomatoes cut-side down directly onto the grill grates. Cook for 4 minutes, or until grill marks appear and the tomatoes soften slightly.

Step 6

Using tongs, carefully flip the tomatoes over. Sprinkle the cut sides with grated Parmesan cheese and grill for another 3–4 minutes, or until the cheese melts and the tomatoes are tender but not falling apart.

Step 7

Remove the tomatoes from the grill and transfer to a serving platter.

Step 8

Garnish with freshly chopped parsley for a burst of color and added flavor. Serve immediately as a side dish or appetizer.
