Ingredients

  • 250 grams Halloumi cheese
  • 2 tablespoons Olive oil
  • 4 pieces Whole wheat tortilla wraps
  • 100 grams Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 4 leaves Lettuce leaves
  • 1 tablespoon Lemon juice
  • 10 grams Mint leaves
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 clove Garlic clove
  • 100 grams Greek yogurt

Directions

Step 1

Slice the halloumi cheese into 1cm thick slices.

Step 2

Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat.

Step 3

Add the halloumi slices and cook for about 2-3 minutes on each side, until golden brown. Remove from the skillet and set aside.

Cut the cherry tomatoes in halves, cucumber into thin strips, and finely slice the red onion.

In a small bowl, prepare the sauce by finely mincing the garlic clove and mixing it with Greek yogurt, lemon juice, a pinch of salt, and black pepper.
