Ingredients

  • 8 ounces Crab meat
  • 3 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1 stalk Celery
  • 2 stalks Green onions
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Cayenne pepper
  • 4 slices Sourdough bread
  • 2 tablespoons Butter
  • 4 slices Cheddar cheese
  • 1 medium Tomato
  • 4 leaves Lettuce leaves

Directions

Step 1

Finely chop the celery and green onions and set aside.

Step 2

In a large bowl, combine the crab meat, mayonnaise, Dijon mustard, lemon juice, chopped celery, and green onions.

Step 3

Season the mixture with salt, black pepper, and cayenne pepper. Mix well to evenly combine all ingredients.

Step 4

Lay out the sourdough bread slices and butter one side of each slice.

Step 5

Turn the bread slices over so the unbuttered side is facing up. Place a slice of cheddar cheese on each of two slices of bread.

Step 6

Spread a generous amount of the crab mixture on top of the cheese, then add tomato slices and lettuce leaves.

Step 7

Top with another slice of cheddar cheese and then close the sandwiches with the remaining slices of bread, buttered side facing up.

Step 8

Heat a grill pan or skillet over medium heat.

Step 9

Place the sandwiches in the pan and grill for about 4-5 minutes per side, or until the bread is golden brown and the cheese has melted.

Step 10

Remove from the grill, cut in half, and serve immediately.
