Ingredients

  • 4 ears fresh corn on the cob
  • 1 large bell pepper (red, orange, or yellow)
  • 1 medium jalapeño pepper
  • 1 small red onion
  • 0.25 cups (chopped) cilantro
  • 1 large (juiced) lime
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons ground cumin

Directions

Step 1

Preheat your grill to medium-high heat.

Peel back the husks of the corn slightly and remove as much of the silk as possible, then brush the corn lightly with 1 tablespoon of olive oil. Re-wrap the husks to protect the kernels while grilling.

Brush the bell pepper and jalapeño with 1 tablespoon of olive oil.

Grill the corn, bell pepper, and jalapeño over medium-high heat for about 8–10 minutes, turning occasionally until the vegetables are charred and tender.
