Ingredients

  • 1 pound Shrimp, large (peeled and deveined, tails on)
  • 0.5 cup Coconut milk
  • 0.75 cup Unsweetened shredded coconut
  • 0.5 cup Panko breadcrumbs
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil (for greasing grill)
  • 1 lime Lime wedges (for serving)

Directions

Step 1

Preheat your grill to medium-high heat. Lightly oil the grates with olive oil to prevent sticking.

Step 2

Rinse the shrimp under cold water and pat them dry with paper towels.

Step 3

In a large bowl, combine the coconut milk, garlic powder, paprika, salt, and black pepper. Add the shrimp to the bowl and toss until evenly coated. Let the shrimp marinate for 10 minutes.

Step 4

In a shallow dish, mix the shredded coconut and panko breadcrumbs.

Step 5

Take each shrimp out of the marinade, allowing the excess to drip off, and dredge it in the coconut-panko mixture. Press gently to ensure an even coating.

Step 6

Thread the coated shrimp onto skewers (if using wooden skewers, soak them in water for 15 minutes beforehand to prevent them from burning).

Step 7

Place the shrimp skewers on the hot grill and cook for 2-3 minutes per side, or until the shrimp turn pink and the coconut coating is golden brown.

Step 8

Remove from the grill and transfer the shrimp to a serving platter. Garnish with lime wedges and serve immediately with your favorite dipping sauce or over a bed of rice.
