Ingredients

  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 6 cups Romaine lettuce
  • 1.5 cups Cherry tomatoes
  • 3 pieces Hard-boiled eggs
  • 1 piece Avocado
  • 4 slices Cooked bacon
  • 0.5 cup Blue cheese crumbles
  • 0.5 cup Ranch dressing or preferred salad dressing

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Pat the chicken breasts dry with paper towels and coat them evenly with 2 tablespoons of olive oil.

Step 3

Season the chicken with salt, black pepper, and garlic powder on both sides.

Step 4

Place the chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C). Once done, remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.

Step 5

While the chicken is grilling, prepare the salad base by washing and chopping 6 cups of romaine lettuce. Place the lettuce in a large serving bowl or platter.

Step 6

Slice the cherry tomatoes in half, peel and slice the hard-boiled eggs, dice the avocado, and crumble the cooked bacon into small pieces.

Step 7

Arrange the cherry tomatoes, hard-boiled eggs, avocado, bacon, and blue cheese crumbles in rows or small sections on top of the lettuce for a visually appealing presentation.

Step 8

Add the sliced grilled chicken to the salad in a designated section or row.

Step 9

Drizzle the ranch dressing or your preferred salad dressing over the top of the salad just before serving, or serve the dressing on the side for individual portions.

Step 10

Toss the salad lightly if desired, or serve as-is for a composed salad look. Enjoy your Grilled Chicken Cobb Salad!
