Ingredients

  • 4 slices Artisan bread
  • 4 tablespoons Butter
  • 4 slices Sharp cheddar cheese
  • 4 slices Gruyere cheese
  • 4 slices Thick-cut bacon
  • 1 medium Yellow onion
  • 1 tablespoon Olive oil
  • 2 teaspoons Dijon mustard
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Begin by preparing the caramelized onions. Peel and thinly slice the onion into rings.

Step 2

Heat olive oil in a skillet over medium heat. Add the sliced onion, salt, and black pepper. Cook, stirring occasionally, for 10-12 minutes until the onions are golden brown and caramelized. Remove from the skillet and set aside.

Step 3

In the same skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Transfer the bacon to a plate lined with paper towels to drain the excess grease.

Step 4

Butter one side of each slice of bread, dividing the butter evenly. Lay the bread slices on a cutting board with the buttered side facing down.

Step 5

Spread 1 teaspoon of Dijon mustard on the unbuttered sides of two of the bread slices.

Step 6

Layer 2 slices of sharp cheddar, 2 slices of Gruyere, 2 slices of crispy bacon, and half of the caramelized onions onto each of the mustard-spread bread slices. Top with the remaining bread slices, buttered side up, to form sandwiches.

Step 7

Heat a clean skillet or griddle over medium-low heat. Place the sandwiches in the pan and cook for 3-4 minutes per side until the bread is golden brown and crispy, and the cheese is fully melted.

Step 8

Remove the sandwiches from the skillet and let them cool for 1-2 minutes before slicing in half.

Step 9

Serve warm alongside your favorite pub-style sides, such as fries, pickles, or a small salad.
