Ingredients

  • 1 pound Ribeye steak
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 cloves Minced garlic
  • 1 large Yellow onion
  • 4 slices Provolone cheese
  • 4 pieces Hoagie rolls
  • 4 tablespoons Mayonnaise
  • 1 cup Fresh arugula

Directions

Step 1

Season the ribeye steak with salt, black pepper, and garlic powder on both sides. Let it sit at room temperature for 10 minutes.

Step 2

Heat a grill pan or outdoor grill to medium-high heat. Brush the steak with olive oil, then grill for 4-5 minutes per side, or until your desired doneness is achieved (medium-rare is recommended). Remove the steak from the heat and let it rest for 10 minutes before slicing thinly against the grain.

Step 3

While the steak is resting, prepare the caramelized onions. Slice the yellow onion into thin rings. Heat a skillet over medium heat and add the butter. Once melted, add the onions and a pinch of salt. Cook, stirring occasionally, for 10-15 minutes until the onions are soft and golden brown. Add the minced garlic and cook for another 1-2 minutes. Remove from heat and set aside.

Step 4

Toast the hoagie rolls: Preheat a skillet or griddle over medium-high heat. Slice the hoagie rolls in half lengthwise and lightly toast the inner sides for 1-2 minutes until golden brown.

Step 5

Assemble the sandwiches: Spread 1 tablespoon of mayonnaise on the inner side of each hoagie roll. Layer the sliced steak on the bottom half of each roll, followed by a portion of caramelized onions. Place a slice of provolone cheese over the onions.

Step 6

Place the assembled sandwich (open-faced) under a broiler or in a toaster oven for 1-2 minutes, just until the cheese melts.

Step 7

Add a handful of fresh arugula on top of the melted cheese. Close the sandwich with the top half of the hoagie roll.

Step 8

Serve immediately and enjoy!
