Ingredients

  • 4 pieces Large tortilla wraps
  • 2 pieces Ripe avocados
  • 2 cups Shredded cheddar cheese
  • 1 small bunch Fresh cilantro
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Cumin powder
  • 2 teaspoons Olive oil

Directions

Step 1

Slice the avocados in half, remove the pit, and scoop the flesh into a medium-sized bowl. Mash slightly with a fork, leaving it chunky.

Step 2

Add the lime juice, salt, black pepper, and cumin powder to the mashed avocado. Mix well and taste for seasoning.

Step 3

Finely chop the fresh cilantro and gently mix it into the mashed avocado mixture.

Step 4

Lay out the tortilla wraps on a clean surface, and evenly spread about 1/4 of the avocado mixture on one half of each tortilla.

Step 5

Sprinkle 1/2 cup of shredded cheddar cheese onto the avocado layer on each tortilla.

Step 6

Fold the empty half of each tortilla over the filling to form a half-moon shape.

Step 7

Heat 1 teaspoon of olive oil in a large skillet or on a grill pan over medium heat. Place one or two quesadillas in the skillet, depending on the size of the pan.

Step 8

Cook each quesadilla for 2-3 minutes on one side, pressing lightly with a spatula to help the cheese melt and the tortilla crisp up. Flip and cook the other side for an additional 2-3 minutes until golden brown.

Step 9

Repeat with the remaining quesadillas, adding a little more olive oil if needed.

Step 10

Slice each quesadilla into thirds or quarters and serve hot with your favorite salsa, sour cream, or guacamole on the side.
