Ingredients

  • 4 Large fresh artichokes
  • 2 Lemon
  • 4 tablespoons Olive oil
  • 3 Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil, and add the juice of 1 lemon to the water to prevent the artichokes from browning.

Step 2

Using a sharp knife, trim the top 1 inch of each artichoke to remove the tips. Also, trim the stem to 1 inch and peel the outer layer of the stem with a vegetable peeler. Use scissors to snip off any sharp tips from the remaining leaves.

Cut the artichokes in half lengthwise and immediately rub the cut sides with a lemon half to prevent discoloration.

Step 4

Scoop out the fuzzy choke in the center of each artichoke half using a spoon, making sure to leave the heart intact.
