Ingredients

  • 4 large Green tomatoes
  • 1 teaspoon Salt
  • 1 cup All-purpose flour
  • 3 large Eggs
  • 1.5 cups Panko breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper
  • 0.25 cup Vegetable oil
  • 2 cups Marinara sauce
  • 1.5 cups Shredded mozzarella cheese
  • 2 tablespoons Chopped fresh parsley (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the green tomatoes into 1/4-inch thick rounds and lightly sprinkle with salt. Let them sit for 5-10 minutes to draw out moisture, then pat dry with paper towels.

Step 3

Set up a breading station with three shallow bowls: one with all-purpose flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, grated Parmesan cheese, oregano, basil, garlic powder, and black pepper.

Step 4

Dredge each tomato slice in flour, dip it into the egg mixture, and then press it into the breadcrumb mixture to coat well. Repeat for all slices.

Step 5

Heat the vegetable oil in a large skillet over medium heat. Fry the breaded tomato slices in batches for 2-3 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain.

Step 6

Spread a thin layer of marinara sauce over the bottom of a 9x13-inch baking dish. Arrange a single layer of fried tomato slices over the sauce.

Step 7

Spoon marinara sauce over the tomato slices, then sprinkle a layer of shredded mozzarella cheese. Repeat the layering process until all the tomato slices are used, finishing with a top layer of cheese.

Step 8

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Step 9

Sprinkle with chopped fresh parsley, if desired, before serving.
