Ingredients

  • 6 medium green tomatoes
  • 1 medium onion
  • 2 cloves garlic

  • 4 cups vegetable broth

  • 0.25 teaspoons smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup heavy cream (optional)

Directions

Step 1

Wash the green tomatoes and cut them into quarters. Peel and dice the onion and garlic. Peel the potato and cut it into small cubes.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent.

Add the garlic to the pot and sauté for 1-2 minutes, stirring frequently to prevent burning.
