Ingredients

  • 4 cups (chopped) green tomatoes
  • 1 cup (chopped) yellow onions
  • 1 cup (chopped) green bell pepper
  • 1 cup (chopped) red bell pepper
  • 2 tablespoons pickling salt
  • 2 cups white vinegar
  • 1.5 cups sugar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 0.5 teaspoons turmeric powder

Directions

Step 1

Wash the green tomatoes, onions, and bell peppers thoroughly. Dice them into small, even pieces and combine them in a large mixing bowl.

Step 2

Sprinkle the chopped vegetables with the pickling salt and mix evenly. Cover with plastic wrap and let sit for 4 hours at room temperature.

Step 3

After 4 hours, drain the liquid from the vegetable mixture and rinse thoroughly under cold water to remove excess salt. Drain well and set aside.

In a large stainless steel or enamel pot, combine the white vinegar, sugar, mustard seeds, celery seeds, and turmeric powder. Stir to dissolve the sugar and bring the mixture to a gentle boil over medium heat.
