Ingredients

  • 1000 grams Green tomatoes
  • 800 grams Granulated sugar
  • 1 whole Lemon
  • 10 grams Fresh ginger
  • 1 whole Cinnamon stick
  • 120 milliliters Water

Directions

Step 1

Wash the green tomatoes thoroughly and cut them into small pieces (about 1 cm cubes). Discard any woody stems or blemished sections.

Step 2

Peel the lemon and ginger. Cut the lemon peel into thin strips, juice the lemon, and finely grate the ginger.

Step 3

In a large, heavy-bottomed pot, combine the green tomatoes, granulated sugar, lemon juice, lemon peel strips, grated ginger, and cinnamon stick.

Add the water to the pot and stir everything gently to combine.

Step 5

Place the pot over medium heat and stir occasionally until the sugar dissolves completely and the mixture begins to simmer.

Once simmering, lower the heat to medium-low and let the preserves cook uncovered for about 45-60 minutes, stirring occasionally. Skim off any foam that forms on the surface during cooking.

The preserves are ready when the mixture thickens and reaches a jam-like consistency. To test, place a small spoonful onto a cold plate and allow it to cool for a minute. If the mixture holds its shape when you draw a line through it with your finger, it’s ready.
