Ingredients

  • 8 medium Tomatillos
  • 2 whole Jalapeño peppers
  • 2 whole Garlic cloves
  • 1 small White onion
  • 1 cup Cilantro
  • 2 tablespoons Lime juice
  • 0.5 teaspoons Salt
  • 1 teaspoons Olive oil
  • 2 tablespoons Water

Directions

Step 1

Preheat a dry skillet or griddle over medium heat.

Remove the husks from the tomatillos and rinse them thoroughly to remove the sticky residue.

Place the tomatillos, jalapeños, garlic cloves (with skins on), and quartered onion on the skillet. Roast them for 8-10 minutes, turning occasionally, until the tomatillos are softened and have a light char, the jalapeños are blistered, and the garlic is golden.
