Ingredients

  • 200 grams Green tea soba noodles
  • 1 teaspoon Matcha powder
  • 4 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sesame oil
  • 250 milliliters Dashi stock
  • 2 Scallions
  • 1 tablespoon Toasted sesame seeds
  • 1 Nori sheets
  • 1 liter Cold water

Directions

Step 1

Bring a pot of cold water to a boil.

Step 2

Once boiling, add 200 grams of green tea soba noodles and cook according to the package instructions, usually about 5-6 minutes.

Step 3

While the noodles are cooking, mix 1 teaspoon of matcha powder with 250 milliliters of dashi stock until the matcha is fully dissolved.

Step 4

In a small saucepan, combine the dashi matcha mixture with 4 tablespoons of soy sauce, 2 tablespoons of mirin, and 1 tablespoon of sesame oil. Heat over medium-low heat until warm. Remove from heat and set aside as the dipping sauce.

Once the noodles are cooked, drain them and rinse under cold running water to stop the cooking process and to remove excess starch. Set aside in a bowl.

Finely chop 2 scallions and cut the nori sheet into thin strips.

Divide the noodles into two serving bowls. Pour the prepared dipping sauce into small individual bowls for each serving.
