Ingredients

  • 2 cups Heavy cream
  • 0.5 cups Whole milk
  • 0.5 cup Granulated sugar
  • 2 teaspoons Matcha powder
  • 5 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 4 teaspoons Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (160°C).

In a medium saucepan, combine the heavy cream, whole milk, and matcha powder. Whisk well to dissolve the matcha, then heat the mixture over medium heat until just about to simmer. Remove from heat and set aside.

In a large mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. Slowly pour in the warm matcha cream mixture, whisking constantly to prevent the eggs from cooking.

Stir in the vanilla extract and strain the mixture through a fine-mesh sieve to remove any lumps for a smooth custard.
