Ingredients

  • 115 grams Unsalted butter
  • 100 grams Granulated sugar
  • 160 grams All-purpose flour
  • 2 tablespoons Matcha powder (green tea powder)
  • 0.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 1 Egg yolk
  • 1 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, matcha powder, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together using a hand mixer or stand mixer until the mixture is light and fluffy (about 2-3 minutes).

Step 4

Add the egg yolk and vanilla extract to the creamed butter mixture. Mix until fully incorporated.

Step 5

Gradually add the dry ingredients (flour mixture) into the wet ingredients, mixing on low speed until a soft dough forms. The dough should be slightly sticky but manageable.

Step 6

Scoop out small portions of the dough (about 1 tablespoon each) and roll them into balls. Place them onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Step 7

Flatten the dough balls gently with your fingers or the bottom of a glass to about 1/4 inch thickness.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes or until the edges are just starting to turn a light golden brown. Be careful not to overbake as they can dry out.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them onto a wire rack to cool completely.

Step 10

Serve the cookies with tea or coffee. Store any leftovers in an airtight container at room temperature for up to 5 days.
