  • 400 grams Spaghetti
  • 2 large Poblano peppers
  • 2 cups Fresh spinach

  • 115 grams Cream cheese
  • 1 cup Chicken or vegetable broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt

  • 0.5 cup Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

Roast the poblano peppers directly over a gas flame or under a broiler until the skin is charred and blistered on all sides. Place them in a bowl and cover tightly with plastic wrap for 10 minutes to steam. Then, peel off the charred skin, remove the stems and seeds, and roughly chop the peppers.
